The process begins with the meticulous selection of ripe Pink Bourbon cherries, ensuring top-notch quality from the Los Pinos and La Primavera farms in Huila. The semi-washed method used for this coffee results in a vibrant and complex flavour experience, featuring notes of pomegranate, green apple, and yellow flowers.


THE PRODUCER

María Belén Díaz is the daughter of a coffee grower and has been connected to the coffee industry her entire life. She has been producing speciality coffee for over 12 years. Additionally, she worked for several years as a coffee quality analyst in the Cauca department of Colombia, where she developed cupping skills and gained knowledge that led her to focus on coffee production. María is one of the 96 women involved in the Huila Condor Project and was one of the first women in the region to obtain a certification in coffee processing from The Forest Academy in 2024. Alongside her husband, Narciso Narváez, and their three sons, she produces coffee. The family arrived in the municipality of Acevedo as workers, and through hard work and savings, they acquired the Resinas farm, where they grow various coffee varieties, including Papayo, Caturra, Castillo, Borbón Rosado, and Geisha.


THE PROCESS

The Semi-Washed Anaerobic process at Resinas involves careful handling:

  • 🍒 Cherry Selection — Meticulous selection of ripe Pink Bourbon cherries
  • ⏱️ Pre-Fermentation — 24 hours whilst in cherry form
  • 🔒 Anaerobic Fermentation — 36 hours in bags
  • 🔧 De-Pulping — Cherries processed after fermentation
  • ☀️ Raised Bed Drying — 15 days to maintain optimal moisture levels

This unique process enhances the coffee's flavour profile, creating vibrant and complex cups.
