THE PROCESS
The Washed process at Mutana Hill involves:
- ๐ Cherry Reception & Sorting โ Freshly picked cherries are floated and hand-sorted to remove defects and ensure uniform ripeness.
- ๐ง Pulping โ The outer skin is removed to expose parchment coffee.
- ๐งช Underwater Fermentation โ Beans ferment submerged in water for approximately 36 hours, breaking down the remaining mucilage.
- ๐ง Washing & Grading โ Coffee is cleaned and separated by density using water channels.
- ๐ง Final Soaking โ A clean-water soak of several hours ensures maximum purity.
- โ๏ธ Raised-Bed Drying โ Beans dry slowly on African beds for 16โ20 days until optimal moisture is reached.
