Bright Yellow is an innovative co-fermented lot produced by Los Patios, a dedicated fermentation and research station developed by The Coffee Quest in La Plata, Huila. Designed as a centre for agronomic innovation, Los Patios works alongside local producers to develop consistent, high-quality experimental lots at scale.
Castillo cherries from farms at 1,600โ1,900 metres undergo a first aerobic fermentation of 12 hours at the producers' farms before travelling to Los Patios, where they are enriched with peach concentrate and a proprietary solution and left for a controlled 48-hour fermentation. The resulting profile is expressively tropical and full of personality.
THE PRODUCER
The Coffee Quest is a Dutch green coffee importer known for working closely with producers across Colombia and beyond to develop traceable, process-innovative lots. Los Patios functions as both a quality laboratory and a community resource โ offering producers access to controlled fermentation infrastructure and expertise that would otherwise be out of reach. The station's model reflects a belief that innovation and smallholder support are not mutually exclusive.
Whilst the Castillo variety is widely grown across Colombia's coffee belt for its resilience and productivity, Los Patios demonstrates that with the right processing approach it can produce genuinely exciting and complex flavour profiles.
THE PROCESS
The Bright Yellow co-fermentation process involves:
- ๐ Selective Harvest โ Ripe cherries picked at farms between 1,600 and 1,900m
- ๐งช Pre-fermentation โ 12-hour aerobic fermentation at origin before transfer to Los Patios
- ๐ง Depulping โ Cherries depulped on arrival at the station
- ๐งช Co-fermentation โ Enriched with peach concentrate and a proprietary culture, fermented for 48 hours under controlled conditions
- โ๏ธ Drying โ Dried on beds for 12โ16 days with regular turning for even quality
This methodical co-fermentation approach creates a consistently tropical, expressive profile with excellent sweetness and a silky body.
THE CUP
