Swerl presents Finca Artemira Tabi — a vibrant, sparkling filter coffee from Salinas in Peru's Cajamarca region, sourced through Khipu, Swerl's long-term Peruvian partner. Tabi is a Colombian hybrid variety that in Ebert Huamán Villegas' hands produces a coffee of remarkable brightness: vivid orange jam sweetness, guava fruitiness, and an intensely floral aromatic character that fills the cup.

This is a coffee that speaks clearly of its altitude and its maker's care — clean, expressive, and alive with the character of Cajamarca's high-elevation growing conditions.


THE PRODUCER

Ebert Huamán Villegas leads Finca Artemira, a family farm in Salinas that has been growing coffee and raising cattle for over forty years. The farm is named after Ebert's mother, Doña Artemira, in recognition of the central role she played in raising the family and sustaining the land. When Ebert took charge in 2017, he brought new energy and a quality-first approach that has since earned the farm recognition at Peru's Cup of Excellence — placing 18th in 2023 — and opened export relationships with some of Europe's most discerning specialty roasters.

Finca Artemira spans 15 hectares dedicated to coffee, cultivating a range of varieties including Tabi, Geisha, and Bourbon. Ebert practises regenerative agriculture throughout: agroforestry systems, native shade trees, soil composting, and careful water management are central to how the farm operates. Despite not being formally organic-certified due to the cost of accreditation, the farm avoids synthetic pesticides and fertilisers entirely, aligning closely with organic principles in practice.

Swerl sources this coffee via Khipu, led by Mark Russell and his cousin — originally from Peru — who has built a network of long-term producing partnerships focused on farms with little to no prior export experience. Khipu's ethos mirrors Swerl's: reliability, trust, and returning year after year.


THE PROCESS

The Anaerobic Double Fermented & Washed process at Finca Artemira involves:

  • 🍒 Selective Harvesting — Hand-picked at peak ripeness
  • 💧 Water Tank Liquidation — Cherries soaked in water tanks to sort and remove defects
  • 🧪 First Anaerobic Fermentation — Cherries sealed in GrainPro bags for 24 hours of oxygen-free fermentation
  • 🔧 Depulping — Cherries depulped after initial fermentation
  • 🧪 Second Fermentation — Depulped beans undergo a further fermentation stage
  • 💧 Washing — Thoroughly washed in clean water
  • ☀️ Raised Bed Drying — Dried on African raised beds with regular turning to ensure even moisture loss

This double anaerobic approach is Ebert's signature protocol for his finest lots — it locks in the cherry's natural sugars and amplifies aromatic complexity whilst maintaining the clean clarity that washed processing provides.
