THE PRODUCER

Jorge is part of the ambitious Gocta Group, a family project founded by his sister Sonia. His precise and methodical approach to processing — including a double fermentation protocol and slow drying on raised beds — produces coffees with refined, consistent cup profiles that have earned Prolog's trust across three consecutive harvests. The project continues to develop, with plans to trial varieties such as Geisha in the future.

Prolog's roastery team — Mikołaj and Federico — visited the farm in Peru and came away deeply impressed by Jorge's commitment to quality at every stage. THE PROCESS

The Washed process at La Colmena involves:
