Hacienda El Obraje is one of the farms that Prolog return to year after year, and with very good reason. From repeated personal visits, the team have witnessed firsthand how meticulously this farm and wet mill are run β every step of growing and processing carried out with exceptional attention to detail. The result is some of the cleanest, sweetest, and most juicy coffees you'll find from Colombia, and this washed Caturra is a beautiful illustration of that.
This is Prolog's fourth year sourcing Caturra from El Obraje, a relationship that reflects both the farm's consistency and their own confidence in it β they have even used El Obraje coffees in competition. The washed Caturra from this farm has become a benchmark for what a clean, accessible yet complex Colombian coffee can be.
THE PRODUCER
Pablo Guerrero was the first person to introduce coffee growing to the Tangua area outside Pasto, beginning in 2000. Hacienda El Obraje had long produced wheat and other grains, but as imported grain made conventional farming unsustainable, Pablo pivoted to coffee. By 2009 he had built his own processing facility and entered the specialty market β and his experimentation has never stopped since.
The nearly 100-hectare estate now cultivates coffee on 25 hectares, with the remainder converted to a natural forest reserve. El Obraje sits near volcanic mountains on mineral-rich soils at 2,200 metres, experiencing dramatic daily temperature swings that produce exceptionally dense, complex beans. The farm's wet mill is immaculate: tile fermentation tanks, depulping equipment, mechanical dryers, and raised solar-dryer beds all support a tightly controlled process.
THE PROCESS
The Washed process at Hacienda El Obraje involves:

- β Flotation Sorting β Cherries floated to remove underripe and defective fruit
- π§ Depulping β Mechanical removal of the cherry skin
- π§ͺ Dry Fermentation β Beans fermented without water to develop complexity
- π§ Washing β Fully washed with clean water to remove residual mucilage
- βοΈ Drying β Dried on raised beds under the solar dryer structure
