Jesús Ángel López is a third-generation coffee producer in Nariño, Colombia, working Finca Las Delicias with his father. Over 14 years he has refined his approach to favour precision over intervention: exclusively washed processing, density sorting, and careful attention to post-harvest handling.

Nariño is one of Colombia's most celebrated coffee-growing departments, situated in the far south of the country near the Ecuadorian border. Its high altitude, volcanic soils, and proximity to the equator combine to produce an unusually long, slow growing season — ideal for the development of complex sugars and acidity in varietals like Gesha.


THE PROCESS

The Washed process at Finca Las Delicias involves:

  • 🍒 Selective Harvest — Only ripe cherries picked by hand
  • Density Sorting — Coffee sorted by density to remove defects and unripe fruit
  • 🔧 Pulping — Fruit skin removed mechanically
  • 📅 Tank Fermentation — Fermented in tanks for 24 hours
  • 💧 Washing — Thoroughly washed to remove remaining mucilage
  • ☀️ Drying — Dried over 15–20 days on raised beds

The shorter 24-hour fermentation and meticulous washing allow the Gesha variety to express its natural aromatic character with precision and clarity.
