Year after year, Chambakú earns its place as one of Nomad's most beloved seasonals. A chocolatey aroma leads into a sweet, creamy cup with a long aftertaste of chocolate, raisins, and dates — balanced and easy-drinking, with a bright, playful edge of acidity that keeps things lively.
THE PRODUCER
Finca Chambakú is the Restrepo family's 12-hectare farm in Villamaría, Caldas — one of 17 farms that make up the broader Hacienda el Jardín. In recent years, the family has adapted the estate's traditional growing roots into a fully modern agro-industrial setup, building the infrastructure needed to produce consistent, high-quality specialty lots. Juan Felipe Restrepo — Q Processor and farm partner — oversees the processing protocols, with a focus on organic fertilisation and meticulous post-harvest care. The proximity of the coffee plantations to the processing facilities allows for tight quality control from cherry to dried parchment.
THE PROCESS
Ripe cherries are hand-picked and pulped, then fermented for 24 hours in water before being dried intermittently in mechanical silos over five days, with temperature carefully managed to keep the parchment mass below 35°C throughout.
