INTRO

Natural processed SL9 from Peru is exceptionally rare, and this lot from Chavez Estate represents one of the most unique expressions of both the varietal and the region currently available. From the same plot and a similar process to the lot that placed fourth in the 2025 Peru Cup of Excellence, this later harvest preserves many of those award-winning qualities whilst leaning into a bigger, more fruit-driven profile.

This is a complex but punchy natural โ€” expressive without losing the clarity and elegance that make SL9 so captivating.

THE PRODUCER

The Chavez family farm sits at 2,145 MASL in Hatumpampa, Cusco โ€” one of Peru's most exciting high-altitude coffee regions. Their SL9 lots have earned international recognition, most notably placing fourth in the 2025 Peru Cup of Excellence. This natural lot comes from the same celebrated plot, produced with the same careful attention that earned that distinction.

SL9 โ€” known colloquially in Peru as "Inca Gesha" โ€” was long thought to be related to Ethiopian Gesha genetics. Genetic testing pioneered by Lance Schnorenberg of SEY Coffee and Christophe Montagnon of RD2 Vision revealed it is instead a very close match to SL-09 from Kenya. Debate continues over whether to use the Peruvian term, as SL9 is not an exact match to SL-09, but it is now the widely accepted designation in specialty coffee.

Regardless of name, the varietal produces a cup of remarkable complexity โ€” floral, fruited, and elegant โ€” that, in the right hands, competes with the very best coffees in the world.

THE PROCESS

The Natural process at Chavez Estate involves:

  • ๐Ÿ’ Selective Harvest โ€” Ripe cherries hand-picked at peak maturity
  • โœ… Cleaning โ€” Cherries washed to remove surface bacteria before fermentation
  • ๐Ÿงช Grainpro Fermentation โ€” Whole cherries fermented sealed inside grainpro bags for 7 days, allowing slow, controlled development of fruit sugars and aromatics
  • โ˜€๏ธ Drying โ€” Dried intact as whole cherries on raised beds

The extended grainpro fermentation amplifies the SL9 varietal's inherent stonefruit and floral character, whilst preserving a remarkable clarity that keeps the cup feeling elegant rather than heavy.

THE CUP

The cup opens with juicy red plum and rose-like florals that immediately lift the profile. As it cools, the fruit shifts toward lighter, sweeter stonefruits โ€” ripe nectarine emerging with real clarity. Throughout the whole experience, a subtle tropical note threads through the cup: honey-like, layered, and complex, like fresh mellow longan. A complex but punchy natural โ€” expressive without losing elegance.

Flavour Notes

  • ๐Ÿ’ Red Plum
  • ๐ŸŒน Rose
  • ๐Ÿ‘ Nectarine
  • ๐Ÿˆ Longan
