A classic Colombian profile with deep sweetness, structured fruit, and rich complexity. Layers of dried cranberry, dark caramel, and subtle liquorice create a cup that feels both comforting and refined. Perfect in milk based drinks.


THE VARIETALS

🌱 Castillo
Castillo was developed by Cenicafé in Colombia as a cross between Caturra and Timor Hybrid, and first released in 2005 in response to the persistence of coffee leaf rust. Named after researcher Jaime Castillo, the variety is highly productive due to its compact, dwarf-like growth structure and performs particularly well when planted densely.

Although Castillo’s cup quality can vary, careful cultivation at altitude can produce exceptional coffees. In blind tastings alongside Caturra, professional tasters have found little difference in overall cup quality.

🌿 Caturra
Caturra is a natural mutation of Bourbon first discovered in Brazil between 1915 and 1918. Widely grown throughout Central and South America, it is prized for its balanced sweetness, approachable acidity, and excellent cup quality at higher elevations.

🍃 Colombia
The Colombia variety was developed by Cenicafé and released in 1982 as a disease-resistant cross between Caturra and Timor Hybrid. It played a major role in protecting Colombian coffee production during severe outbreaks of leaf rust in the 1980s. Under careful cultivation and at altitude, Colombia can produce cups with excellent sweetness and complexity.
