THE PRODUCER
Alejandra Angel produces coffee at Fincamigos in Antioquia, Colombia, with a focus on careful cultivation and processing designed to highlight the clarity and complexity of traditional varieties like Typica.
THE VARIETAL — TYPICA
Typica is one of the most historically significant and widely cultivated varieties of Coffea arabica, particularly throughout Central and South America. It is known for its exceptional cup quality potential at high altitude, though it is also characterized by low production yield and vulnerability to diseases such as coffee leaf rust.
The variety originated in southwestern Ethiopia before being transported to Yemen between the 15th and 16th centuries. By the early 1700s, Typica had spread from Yemen to India and then onward to Java in present-day Indonesia. Seeds from Java later became the foundation for the Typica lineage cultivated across the Americas.
In 1706, a single Typica plant was transported from Java to Amsterdam and planted in the Dutch royal botanical gardens. Descendants of this plant were later shared with French colonial territories, ultimately spreading throughout the Caribbean, Central America, and South America.
Although Typica is less commonly planted today due to its low productivity and disease susceptibility, it remains deeply respected for its elegance, florality, and refined cup character.
THE PROCESS
🍒 Selective harvesting — Carefully picked ripe cherries
💧 Washed processing — Highlights clarity, florality, and structure
☀️ Slow drying — Preserves sweetness and aromatic complexity
