Intro

This natural Ethiopian from Halo Washing Station is a vibrant expression of Yirgacheffe at its most playful and expressive. Built from the cherries of hundreds of smallholder farmers, this lot captures the region’s hallmark intensity—bright, fruit-driven, and unmistakably complex—while remaining clean and elegant.

The Producer

Halo Washing Station is located in Halo Barite, Gedeb, at elevations reaching over 2,000 meters above sea level. It serves as a central delivery point for around 700 smallholder producers, many farming small, semi-forested plots rich with native shade trees. These farms are located close to the station, allowing cherries to be delivered shortly after harvest—an essential factor in preserving freshness and quality.

Halo is one of three washing stations supported by SNAP, an organization dedicated to strengthening coffee-growing communities. Beyond quality control and agronomic training, SNAP invests directly in local infrastructure—supporting schools with technology, improving road access, and working toward better healthcare through future clinic development.

The Process

This lot is naturally processed, beginning with flotation and meticulous hand-sorting to remove defects and ensure uniform ripeness. Cherries are then spread in thin layers on raised drying beds and turned every 30 minutes to ensure even drying and prevent over-fermentation. As drying progresses, the layers are gradually thickened to slow moisture loss while maintaining consistency. Total drying time ranges from 8 to 20 days, depending on weather conditions.

In the Cup

The cup is bright, tropical, and candy-like, bursting with juicy fruit character and layered sweetness. There’s an unmistakable confectionery quality—playful and vibrant—balanced by the complexity and clarity that high-altitude Gedeb coffees are known for. The result is a lively, expressive natural that’s fun to drink yet impressively refined, with depth that keeps you coming back sip after sip.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
