This washed Pink Bourbon and Tabi lot from Dilio Pechene is one of the most extraordinary coffees we have tasted in years. It won 1st place at the 2025 Best of Cauca competition, where its vivid aromatics and remarkable clarity immediately stood out among the competition field.
When brewed, the cup opens with a bold burst of pomegranate, layered with the rich sweetness of fresh tamarind and carried by a delicate, lemony note of magnolia blossom.
THE PRODUCER
Dilio Pechene is a multi-generational coffee producer from Piendamó, Cauca, where he works alongside his siblings and uncles, all of whom manage neighboring farms. At Finca La Primavera, his focus is on harvesting cherries at peak ripeness — often waiting until the fruit reaches a deep purple color just before falling from the branch.
For fermentation management, Dilio uses the “Fermaestro” system developed by the Colombian Coffee Growers Federation (FNC), carefully tracking fermentation time to maximize cup quality and consistency.
Winning first place at Best of Cauca 2025 marked a major milestone for Dilio and his family after years of participation in the competition. This lot later achieved the highest auction price of the event, selling for $67/kg.
THE VARIETALS
🌸 Pink Bourbon
First identified in Colombia in 2013, Pink Bourbon is celebrated for floral aromatics, citric acidity, and honey-like sweetness. Despite the name, it is likely genetically closer to Ethiopian landrace varieties than traditional Bourbon. In the cup, it often resembles washed Ethiopian coffees or Panamanian Geisha in its elegance and florality.
🌿 Tabi
Released by the FNC in 2002, Tabi is a hybrid of Bourbon, Typica, and Timor developed for disease resistance and cup quality. Grown at high altitude with careful cultivation, it contributes sweetness, structure, and balance to the final profile.
